Mango Shrimp Ceviche

On those hot summer nights a great cool snack is at your fingertips! This cool summer snack will tantalize your taste buds and leave you refreshed and wanting more!

To prepare the raw shrimp completely submerge shrimp in a bag of lime juice overnight until completely opaque. If you don’t desire to use raw shrimp sauté the shrimp in a pan until opaque and you cannot see through. Remove the shrimp and chill in the refrigerator until all ingredient prep is done. Take a bowl and cutting board and dice 1 large tomato, dice ½ cup of onion, dice 2 jalapenos, deseed the jalapeno then place in the bowl, squeeze the juice of 2 lemons, 1 orange, and 2 limes, in the bowl, and 1 tablespoon of fresh chopped cilantro. Then once done retrieve the shrimp from the refrigerator and chop into pieces and add to the bowl then mix, and add 1 teaspoon of Louisiana hot sauce for an extra kick!

Served with tricolor exotic potato chips including: naturally blue potatoes, sweet potatoes, and Yukon gold potatoes.
