Coconut Curry Lemon Grass Basil Tofu Soup
Inspired to create vegan meals I have always have a fondness for trying new things! I am passionate about cooking and wanted to experiment in the kitchen! The slogan “I am going Vegan” has intrigued me for a while. The option to be void of meat seems to be a challenging feat but with will power and determination anything is feasible! I wanted to experiment with vegan options to see if I could make healthier alternatives to satisfy ones desire for tasty food and satisfy ones hunger!

I have used basic earthy ingredients to deliver a sumptuous meal that will fill you up and satisfies your taste buds!
I love cooking with basil and lemon grass they both have a very aromatic fragrance that are fun to cook with and add a burst of flavor to your food! This coconut curry Lemon grass basil soup is a delicious vegan addition to your life!
Coconut Curry Lemon Grass Basil Soup
1 cup of coconut milk
½ tsp of curry powder
2 tbsp. of lemon grass puree
1 tsp of minced basil
½ cup of cubed tofu
2 tbsp. of vegetable oil
½ cup of sliced onions
½ cup of red yellow and green bell peppers
Saute the 2 tbsp. of vegetable oil with the onions, and bell peppers, until onions are translucent
Add 1 cup of coconut milk and lemon grass puree, ½ tsp of curry powder and continue to stir and simmer
Add the tofu and continue to cook bring to a slight boil for 5 minutes then reduce heat.
Add fresh minced basil to finish the dish cool for 2 minutes then serve
