Let’s get started we’re making: Brown Rice, Barley and Kale stir fry topped with Grilled Tofu
Ingredients:
1 cup of Red beans
1 cup of brown rice
Firm tofu pieces
½ cup of sliced carrots
½ cup of sliced broccoli
1 cup of kale
1 cup of barley
½ cup of dried cranberries
4 sliced cherry tomatoes
1 Tbsp. vegetable oil
½ tsp of minced basil
Cooking Directions:
Wash and rinse beans cook until tender according to bag instructions
Rinse brown rice combine with enough water to cover and allow 1 extra inch of water to cover rice. Bring to a simmer until water evaporates from the top of the rice and cover and cook on low for 20 minutes
Rinse hull free barley combine 1 cup of barley with 3 cups of water and bring to a boil then reduce heat and simmer until tinder
Slice tofu and grill tofu on both sides
Sautee carrots, broccoli, and kale with vegetable oil and ½ tsp of minced basil until tender
Combine rice, barley, beans, and sautéed vegetables and mix together
Then plate and top with grilled tofu and add dried cranberries and garnish with sliced cherry tomatoes and fresh basil
