Cajun Andouille sausage and chicken Jambalaya

1 pound of andouille sausage

1 cup of shredded previously cooked chicken

2 tablespoons of vegetable oil

1 whole onion diced

1 cup of diced celery stalks

1 cup of green bell peppers

1/2 cup of red bell peppers

1 medium diced tomato

1 can of tomato sauce

¼ cup of chopped green jalapenos (optional)

½ tsp of crushed red pepper

½ tsp of black pepper

½ teaspoon of garlic powder

1 tsp of seasoned salt

2 tbsp. of New Orleans Cajun seasoning may adjust per desired hot level

2 teaspoons of sugar

1 & ½ cups of cooked long grain white rice

1 tbsp. of chopped chives

Add the vegetable oil to the pan.

Sautee the celery, onion, and bell peppers until the onion is translucent

Add the Andouille sausage and cooked thoroughly

Then add the previously cooked shredded chicken

Then continue to sauté add then add the diced tomatoes and tomato sauce

Then while simmering add the seasonings continue to simmer then turn off the heat, and add the white rice.

Garnish with fresh chopped chives and enjoy!
