Soy Chorizo Tostadas
Tostadas a delectable treat! Living in Arizona I have gained a craving for tacos, tostadas, burritos and nachos! All craveable meals that are not always the healthiest meal options! But let’s change that!
Thinking outside the box to make these meals healthy and delicious! Using soy chorizo is a healthier alternative that can make your Taco Tuesday possible with an all Vegan diet!
To create your Taco Tuesday Vegan Style you will need:
Ingredients:
1 package of soy chorizo
1 small package of pinto beans
2 jalapenos
4 tbsp. of vegetable oil
1 package of corn tostada shells
1 cup of shredded lettuce or cabbage
1 large tomato
1 medium onion
1 bunch of cilantro
1 lime
¼ cup of shredded vegan cheese
½ tsp of pepper
½ tsp of chili powder
½ tsp of season all
½ tsp of paprika
1 and ½ tsp of hot sauce (optional)
Preparation:
To prepare refried beans cook to package instructions (preferably in a crock pot) Then cool beans mash beans and add 2 tbsp. of vegetable oil and 1 pureed jalapeno to desired spice level. (Removing seeds with decrease heat level).
Cook soy chorizo according to package directions and add 2 tbsp. of vegetable oil, ½ tsp of pepper, ½ tsp of chili powder, ½ tsp of season all , ½ tsp of paprika , and 1 and ½ tsp of hot sauce (hot sauce is optional) mix chorizo and spices all together.
To prepare Pico de Gallo dice tomatoes, onions, and 1 jalapeno, and ½ cup of chopped cilantro together.
To prepare tostada take one tablespoon of the refried beans and spread on the tostada shell, then add the cooked soy chorizo, shredded lettuce or cabbage, and the fresh Pico and top with shredded vegan cheese. Squeeze fresh lime juice and enjoy!
